Geography
Dobrodzha is an area of the Balkan Peninsula which covers part of the Lower Danube Plain. To the east it borders the Black Sea, to the north and northwest - with the lower reaches of the river Danube, to the south – with the valley of the river Batovska. To southwest Dobrodzha gradually moved into the so called Ludogorie area. Dobrodzha is divided into South Dobrodzha, which is within the boundaries of Bulgaria, and North Dobrodzha, which is within Romania.


Historical fact
The territory of modern South Dobrodzha is a land of the oldest societies in Europe which knew sedentary life, stable construction, metal art and sacred gold. The findings in Dourankoulak Lake and the Varna Necropolis show us that the first proto-European civilization lived here 2000 years before the cultures of Egypt and Mesopotamia.
The disappearance of this culture is associated with a large universal flood, similar to that described in the Bible.

Dobrudzha is a region that has went through a lot of battles, migrations and nations and yet remains rich and generous land. Today in Bulgaria we call this land "The Bulgarian granary"
The fertility of this region is associated with a variety of cereals (millets, oats, barley, rye, wheat) legumes (beans, lentils, peas, vetch, beans) vegetables (peppers, eggplant, tomatoes, potatoes, okra) also rice, sunflower, corn, spices and others.
Dobrudzha has a specific and interesting culinary culture in which traditional Bulgarian tastes are mixed with other Balkan and European influence.
Here one can taste all kind of traditional Bulgarian dishes, but bread has special place in Dobrudzha cuisine.
It is a well-known fact that Dobrudzha women are past-masters in kneading different kinds of bread and cakes. Usually white flour is preferred for making cookies, "milinki", cakes, buns and other traditional breads.
The technique for rolling out pastry is well-know.
It is an old and almost forgotten tradition to bake the bread in a specific crock – "podnitsa" which has a metal lid. The "podnitsa" were directly put on the coals of the hearth.
In Dobrudzha stewed in pottery dishes and soups are very popular.
Here is produced the sweetest red pеpper. All kind of stuffed vegetables are very popular food – eggplant, pepper, tomato, zucchini.
